I have completely changed the way I cook a ‘curry’ now. This book has taught me the principles of south indian cooking and now I always base my curries on a thin dahl. Following the recipes in this book is a bit daunting at first as they have several stages, and three sets of spice to mix and grind, but once you realise that many oft he recipes follow the same steps you have cracked it. you can make up three or four of the masala mixes and keep them in airtight jars to speed the process up. the various rice dishes are wonderful, and I shall soon start on the dosas and idlis…

I bought this book a few months ago and use it almost every day. It’s great. Even if you don’t have a few ingredients, it turns out fantastic. I have used other cookbooks before but I find this the most easy to understand and follow. Would highly recommend it.

Looking forward to making these recipes but unfortunately the author fails to specify what TYPE of red chillies to use. Recipes only ever say “red chillies”. At least 5 types are used in South Indian cooking, each having a different heat and flavour profile. Using the wrong type can alter the taste. This, to me, is a significant oversight by the author. If anyone here knows what chillies to use, please give the name of them.

I have spent lots of time in Karnataka Tamil Nadu and Kerala and this book for me brings back the authentic tastes from south India. It is a lovely book nicely presented and illustrated. Easy to follow and informative. The ingredients can all be bought from Asian stores or online.

The best cookbook I own! I’m from a South Indian family and the recipes and spices used are authetic and we’ve even got ideas for new recipes (like different types of dosa). The dishes came out perfect! I’m so glad I bought this.

Very nice, and incredibly authentic, so much so that I’d not even heard of many of the categories of dish in this book. Covers south Indian meals completely, for any course or occasion, and includes meal plans, and a great deal of context about south Indian cuisine. An eye opener, most recommended.

This book is packed full of delicious recipes and what’s more, it’s proper Indian cooking. It explains everything you need to know about the South Indian way of cooking and has a great section on spices/ingredients, and suggested menus. If I were you, I’d buy this book.
