This is a great book, backed by a great mission, and wonderful not-so-secret ingredient. Helped me and the family fall back in love with pulses, especially when using them in new ways – as part of a roast chicken being the most special. Buy it buy it buy it buy it!

I don’t often write reviews but after using this book for a few months I thought I had to. This book is an amazing collection of recipes that are so much more than the sum of their parts. I don’t know how they do it- what magic they use- but even dull looking ingredients lead to an amazing taste experience. Tonight I cooked the fennel, aubergine and butter bean stew with capers. My OH is not fond of aubergine, fennel or capers but I thought- give it a try. With trepidation he tried it- result- this is nice- and yes- he would have it again. Result! He’s a carnivore by choice. Great recipes; healthy and well put together. Buy it.

Found the beans first and the website. Used one or two recipes and thought i’d get the book. It’s so good-i’ve ordered 3 as Christmas presents. Havent tried one we didnt like. Also identified somd other plant based chefs to look at. Wins all around!

This book is filled to the brim of gorgeous recipes that you wanna and will make. I think a lot of cookbooks can end up gathering dust. But this one will not!
Ive all-ready made a good few and only had it 2 weeks!
Ive bookmarked so many dishes but next on the list are the chickpea satay boats , the crispy gochujang chickpeas and the furious fennel & black bean salad.
It goes through ways to make tinnned beans tastier but really if you can get your hands on there beans it just makes everything extra. Also some thought provoking reading on how good beans are for your gut, for the soil and for the planet.

I tried a recipe from this book that was published I think in the Times food section (can’t remember) and then ordered the book. Also purchased the Bold Bean Co beans – what a game changer! These beans are totally different from normal supermarket canned beans. I have now tried about 1/2 dozen recipes from the book (today was a delicious Crispy herb-stuffed chicken with truffle beans), so far all excellent, and looking forward to trying more. A change from potatoes (and I think a bit healthier anyway) and absolutely delicious! You can still use canned beans for the recipes – the book shows you how to ‘adapt’ them to make them better. But highly recommend purchasing the beans from them as well as they are not like the beans you may be used to 🙂

Excellent book for bean experimentation. The recipes are all pretty adaptable. Bold Beans also sell delicious jars of produce. A bit more expensive but definitely a superior quality ingredient. Recommend
