    I have been shielding over the last year, and the television programmes on a Saturday, where Raymond cooked in his infamous garden were a delight, seeing the vegetable garden and cooking in it was truly inspiring, so when the book was mentioned I pre-ordered as I hoped to try and recreate some of them at home. I did try and grow vegetables last year with varied success and hoped that this cook book would also mention varieties that had been tried and tested. The book arrived today and having read through I am really pleased and looking forward to cooking a number of the recipes already (and ordering some seeds!)
    The book does include details of the vegetable varieties as I hoped, but also lots of useful tips on using all of the vegetable including celeriac tops and fennel roots! Even better to ensure no waste there are suggestions of when to freeze, so if you have a glut of vegetable how to prep a recipe and when to freeze. Each recipe includes not only prep and cook time but also variations, so useful when items are not available.
    I liked that there are also tips on recipes that you may have tried before, I am trying the tips on Pear almandine as soon as possible, it is a favourite but sometimes soggy…..not any more. There is also a ratatouille recipe that takes 20 minutes! There are also brand new recipes that sound so intriguing. I have earmarked the following to try
    Avocado soup
    Remoulade….elevated to the next level with a garnish
    Falafel with chickpea mayonnaise
    Mussel and saffron Risotto
    20 minute Ratatouille
    Jasmine Milk pots
    I would recommend this book for newbies to the kitchen as the instruction is so comprehensive, but even those who have been cooking a while will find new advice and recipes to try.

    I’m never going to taste his food but I can bring a bit of Raymond into my life through his cookbook and experiences on tv.

    Very late into my mother and father’s life I started to cook for them a dish I’d seen on tv, French country cooking I think it was which featured Monsieur Blanc cooking dishes from various French regions. This dish came from his own family’s region I think and I scribbled down the recipe and method as best I could and vowed to try it sometime. When I did the three of us it was one of the best eating we’d had in a long time and it became a welcome treat for the three of us until my Mama died and a year later Dad too. I’m about ready to make that dish again. It’s reproduced in full in this book and isn’t quite how I made it so I’ll see whose version is better! The main ingredient is thankfully easy to obtain in the uk, the sublime morteau sausage. And the dish is well worth buying the book for this alone.
