A collection of vegetarian and vegan recipes taught and cooked for thousands of people every year. The recipes are 100 percent people tried and tested. Fresh, full of flavour and inspired by regional cuisine, they showcase a range of cookery techniques and a variety of ways to make meat-free meals tempting and indulgent. One of the most appealing things about the book is its variety. Each chapter is inspired by food from one area of the world. For extra flexibility, the contents are laid out by region, as well as by type of dish: starters, mains, etc. As a teacher, it’s my default mode to fill in any gaps so the recipes include plenty of detail, sometimes useful background information, sometimes just to help with the instruction. The book also contains a tool kit and knife skills section to help the reader get off on the right track to becoming a natural in the kitchen. The aim of the book is to engage the reader with something new; an ingredient, a knife skill, toasting of spices, making a paste or kneading of dough. Seasoned cooks will be inspired with fresh takes on familiar recipes while those just getting started in the kitchen will acquire a broad base to stand on. They also show people how gorgeous vegetarian food can be. Seasonal ingredients taste better, enough said. Throughout the book readers are encouraged to swap and change vegetables for those that are in season, or to maybe just avoid making moussaka in February when the aubergines won’t taste as nice. Most of the recipes have been inspired by my fondest food memories, whether it be dishes eaten when travelling or meals at favourite restaurants. These are wonderful sensory experiences that I hope to recreate and share with the reader.

Wow! This book is quite simply amazing.
Erin has obviously put her heart and soul into creating this book the recipies are very easy to make and the dishes look amazing.
Would definitely recommend this book to everyone who enjoys cooking lovely vegan food.

This book is full of fantastic easy to follow and seriously tasty recipes. Beautifully photographed, and everything I have cooked from it is equally tantalising and delicious as the photos. The fusion of culinary delights from all around the world makes it my number one go to recipe book. I would recommend this book, both veggies and non veggies.

I received this book for Christmas and have been using it regularly since. The recipes are easy to follow and the dishes are so flavoursome. Perfect for someone cutting down on or giving up meat and wanting some fresh new recipes to pep up dinnertime. The format of the book helps it stay open on the page you want and the photographs are gorgeous. Fab.

This cookery book has fast become a permanently open fixture in my kitchen since treating myself to it at Christmas! I’ve been fortunate to attend a few of Erin’s workshops and regularly go out to eat at her catered events, so being able to make her incredible dishes at home is wonderful. Her approach is very straightforward and accessible, and although there are a few “showing off” dishes in here, the vast majority are meals that I can (and do!) make regularly – even simple things like finally finding a hummus recipe that I can make that doesn’t look and taste like grout, and the chocolate sauce to die for, both of which I make a batch of every week now.
Although I’m not vegan/vegetarian myself, I am conscious of reducing the amount of animal products I eat, and this book has helped tremendously, and even sceptical friends, have been pleasantly surprised when I’ve cooked dishes for them from here – often so much so that they ask for the recipes themselves!
In short – delicious, easy to make recipes that you’ll become staples for your everyday eating.
