A true celebration of the sea, Tom Kitchin’s Fish & Shellfish showcases the brilliant talents of one of the UK and Scotland’s favourite chefs.
Tom’s passion for the best and freshest produce comes to life in these pages, as he celebrates the best fruits of the sea. Recipes take in delights such as grilled lobster, poached langoustines with aioli, crab and pea soup, braised squid risotto and Thai-style oysters, alongside roast turbot with seaweed hollandaise, whole lemon sole with a citrus and basil dressing, Cullen skink and salt cod fritters. There are also some recipes straight from Tom’s Edinburgh gastropub, The Scran and Scallie, including their delectable fish pie and special battered fish. These are recipes that take you right to the shore-side and the spirit of fish cookery.
Beyond the recipes, there are top tips for how best to prepare this beautiful ingredient, and Tom also provides a quick and easy guide to grilling, poaching, frying, curing and roasting fish. With beautiful photography to accompany each recipe, this is guaranteed to become the go-to book for lovers of fish and shellfish.

Fish and shellfish lovers dream recipe book.

Tom & his recipes are excellent but I have had to scribble ALL OVER this book like the Half Blood Prince. It’s not very well written/produced at all. For example, half way through a recipe it will say something like, ’30 mins before you begin to cook …marinade the fish!!’ or “preheat the oven!!” That should be step 1 not in paragraph 4/5?!!
The pictures of the food are also very disjointed with the text. You could easily fit a picture of the dish on many of the sparse recipe/text pages rather than half a page of a recipe and then 2 pages later see a picture of what you are cooking. Have a pen on hand for arrows & bullet points ……

Amazing recipes and if you are anywhere near Edinburgh go to Tom’s restaurant there for the tasting menu! You will not be dissapointed!
The book only has a main image of the final product which if you are not that great at cooking like me makes it a bit tricky but still achievable.
Highly recommend the scallops in the shell!!!

I bought this as a present for my other half – he is a real fan of Tom and likes to cook fish. So far, we have enjoyed just a few of the recipes but they have all been successful and enjoyable.
